  • 400 g zucchini, grated
  • 1 brown onion, grated
  • 1/3 cup extra virgin olive oil
  • 200g streaky bacon, chopped
  • 1 garlic clove, minced
  • 4 large eggs
  • Pinch black pepper
  • 1 cup self-raising flour
  • 1 1/2 cups cheddar cheese, shredded
Method
  1. 1Line a rectangular metal baking pan (approx. 30x20x3cm) with baking parchment paper, leaving overhang.
  2. 2Dice the streaky bacon into small cubes.
  3. 3Grate the zucchinis and white onion using a box grater. Squeeze out excess water from the grated zucchini.
  4. 4Sauté the diced bacon in a frying pan with olive oil until it is light golden. Add minced garlic towards the end and sauté briefly.
  5. 5In a large mixing bowl, whisk the eggs and black pepper. Then, whisk in the flour until combined into a smooth batter.
  6. 6Add the cooked bacon (along with rendered fat), grated zucchini, grated onion (including juices), and most of the grated cheese to the batter. Mix thoroughly with a wooden spoon or spatula until evenly combined.
  7. 7Pour the mixture into the prepared baking pan and spread it out evenly.
  8. 8Sprinkle the reserved grated cheese and some diced bacon over the surface and gently press down.
  9. 9Bake in a preheated oven for 35 minutes until golden brown.
  10. 10Remove from the oven and allow to rest in the pan for 10 minutes, then cool for another 5 minutes before carefully lifting out onto a cutting board.
  11. 11Cut the Zucchini Slice into 12 squares to serve.
