- 400 g zucchini, grated
- 1 brown onion, grated
- 1/3 cup extra virgin olive oil
- 200g streaky bacon, chopped
- 1 garlic clove, minced
- 4 large eggs
- Pinch black pepper
- 1 cup self-raising flour
- 1 1/2 cups cheddar cheese, shredded
Method
- 1Line a rectangular metal baking pan (approx. 30x20x3cm) with baking parchment paper, leaving overhang.
- 2Dice the streaky bacon into small cubes.
- 3Grate the zucchinis and white onion using a box grater. Squeeze out excess water from the grated zucchini.
- 4Sauté the diced bacon in a frying pan with olive oil until it is light golden. Add minced garlic towards the end and sauté briefly.
- 5In a large mixing bowl, whisk the eggs and black pepper. Then, whisk in the flour until combined into a smooth batter.
- 6Add the cooked bacon (along with rendered fat), grated zucchini, grated onion (including juices), and most of the grated cheese to the batter. Mix thoroughly with a wooden spoon or spatula until evenly combined.
- 7Pour the mixture into the prepared baking pan and spread it out evenly.
- 8Sprinkle the reserved grated cheese and some diced bacon over the surface and gently press down.
- 9Bake in a preheated oven for 35 minutes until golden brown.
- 10Remove from the oven and allow to rest in the pan for 10 minutes, then cool for another 5 minutes before carefully lifting out onto a cutting board.
- 11Cut the Zucchini Slice into 12 squares to serve.
