Ingredients
- 3/4 cup ghee
- 1 cup large-sized dry wheat groats (lapsi/kansar)
- 1 small piece cinnamon stick
- 3-4 pods green cardamom
- 4 cloves
- 3 cups hot water
- 1 cup sugar
- 3/4 cup jaggery (as an alternative to sugar)
- 1 teaspoon charoli (chironji seeds)
- 1/2 teaspoon cardamom powder
- A few strands saffron, dissolved in a little water
- A handful fried cashews
- A handful raisins
- A handful chopped pistachios
- (Optional) almonds
Method
- 1Place a pressure cooker on a gas stove, then add 3/4 cup of ghee and let it melt and heat up on medium flame.
- 2Add 1 cup of large-sized wheat groats (Lapsi) to the hot ghee and roast continuously on a medium flame with a spatula, avoiding high heat to prevent burning.
- 3As the groats start to turn golden, add 1 small cinnamon stick, 3-4 green cardamoms, and 4 cloves, then continue roasting until the groats achieve a deeper, uniform golden-brown color and the ghee is almost fully absorbed (about 5-7 minutes).
- 4Turn the flame to low (or off temporarily), carefully add 3 cups of hot water to the roasted groats, and stir well.
- 5Cover the pressure cooker with its lid and pressure cook on a medium flame for 2 whistles.
- 6After 2 whistles, turn off the gas and let the pressure release naturally from the cooker.
- 7Open the cooker, then gently stir the lapsi to ensure it is perfectly cooked with all the water absorbed and individual grains.
- 8Turn the gas back on to a medium flame, then add 1 cup of sugar (or 3/4 cup jaggery), 1 teaspoon of charoli, 1/2 teaspoon of cardamom powder, and the saffron water.
- 9Stir well and continue cooking on a low flame until the sugar melts, its water evaporates, the mixture thickens, and ghee starts to float on top again.
- 10Once the ghee floats on top and the lapsi reaches a soft yet cohesive consistency, turn off the gas.
- 11Add fried cashews, raisins, and chopped pistachios, then stir to incorporate them into the lapsi.
- 12Leave the cooker open and allow the Lapsi to rest for about 10 minutes to become fluffy before serving.
