Ingredients
- 3 ripe bananas
- About 1.5 cups of finely chopped fresh fenugreek leaves (methi)
- 2 tablespoons of finely chopped fresh cilantro (hara dhaniya)

- ½ teaspoon of turmeric powder (haldi powder)
- 1 teaspoon of red chili powder (lal mirch powder)
- 2 teaspoons of roughly crushed dry coriander seeds (sukha dhaniya)
- 1 teaspoon of roughly crushed black peppercorns (sabut kali mirch)
- Salt, to taste
- ¾ to 1 cup of gram flour (besan)
- A pinch (less than ¼ teaspoon) of baking soda
- 2 teaspoons of hot oil (for the batter)
- Cooking oil, for deep frying
Method
- 1Peel and place three ripe bananas in a clear glass bowl.
- 2Thoroughly mash the bananas with a fork until they form a lumpy, pulpy paste.
- 3Add about 1.5 cups of finely chopped fresh fenugreek leaves and 2 tablespoons of chopped fresh cilantro to the mashed bananas.
- 4Incorporate 1 tablespoon of ginger-green chili paste, ½ teaspoon of turmeric powder, 1 teaspoon of red chili powder, 2 teaspoons of roughly crushed dry coriander seeds, and 1 teaspoon of roughly crushed black peppercorns.
- 5Add salt to taste and initially mix in ½ cup of gram flour (besan) by hand until well combined, ensuring no water is added.
- 6Add another ¼ cup of gram flour to achieve the desired consistency, making the total amount of gram flour between ¾ to 1 cup.
- 7Sprinkle a tiny pinch of baking soda (less than ¼ teaspoon) into the batter, followed by 2 teaspoons of hot oil.
- 8Thoroughly combine the mixture with a spatula until the batter is thick and ready for frying immediately.
- 9Heat cooking oil in a small pot on a gas stove until medium-hot.
- 10Drop small, irregular portions of the batter into the hot oil by hand.
- 11Deep-fry the fritters, gently stirring and turning them with a slotted spoon to ensure even cooking, until they turn a beautiful golden brown color and become crispy on the outside.
- 12Remove the golden and crispy fritters from the oil using the slotted spoon, allowing excess oil to drain, and serve.
