- 1Thoroughly wash the raw, thorny singhada (water chestnuts).
- 2Place the raw water chestnuts in an air fryer.
- 3Air-fry the water chestnuts for 10-12 minutes at 150 degrees Celsius until their outer shells appear darker and somewhat shriveled.
- 4Carefully peel the cooked water chestnuts by hand to reveal their soft, pale, edible interior.
- 5Transfer the peeled water chestnuts into a clear glass container.
- 6Generously sprinkle chilli powder, cumin powder, and salt over the water chestnuts.
- 7Add a small spoonful of desi ghee to the mixture.
- 8Seal the container with a lid and vigorously shake it to ensure all the water chestnuts are evenly coated with the spices and ghee.
- 9Transfer the spiced water chestnuts into small, round, disposable bowls.
- 10Garnish each serving with a sprinkle of white sesame seeds and fresh, chopped green cilantro.
- 11Insert a small wooden pick into one of the pieces for easy eating.
