Method
  1. 1Thoroughly wash the raw, thorny singhada (water chestnuts).
  2. 2Place the raw water chestnuts in an air fryer.
  3. 3Air-fry the water chestnuts for 10-12 minutes at 150 degrees Celsius until their outer shells appear darker and somewhat shriveled.
  4. 4Carefully peel the cooked water chestnuts by hand to reveal their soft, pale, edible interior.
  5. 5Transfer the peeled water chestnuts into a clear glass container.
  6. 6Generously sprinkle chilli powder, cumin powder, and salt over the water chestnuts.
  7. 7Add a small spoonful of desi ghee to the mixture.
  8. 8Seal the container with a lid and vigorously shake it to ensure all the water chestnuts are evenly coated with the spices and ghee.
  9. 9Transfer the spiced water chestnuts into small, round, disposable bowls.
  10. 10Garnish each serving with a sprinkle of white sesame seeds and fresh, chopped green cilantro.
  11. 11Insert a small wooden pick into one of the pieces for easy eating.
