  • 2-3 carrots

Method
  1. 1Peel and julienne raw carrots into long, thin strips.
  2. 2Thinly slice a small red onion or shallot.
  3. 3In a small bowl, combine light soy sauce, sesame oil, honey, chilli sauce, apple cider vinegar, and red chilli flakes.
  4. 4Whisk the dressing ingredients thoroughly until well combined.
  5. 5Cut the block of tofu into small, bite-sized cubes.
  6. 6Place tofu cubes in a bowl, season with black pepper and salt, and dust with cornstarch or flour to coat evenly.
  7. 7Gently toss the tofu by hand to ensure full coverage.
  8. 8Heat a small amount of cooking oil in a stainless steel pan.
  9. 9Add the coated tofu cubes to the hot pan and pan-fry until golden brown and slightly crispy on all sides, stirring occasionally with a wooden utensil.
  10. 10Place the julienned carrots, sliced onions, chopped cilantro, and crushed peanuts into a large bowl.
  11. 11Add the fried tofu pieces to the bowl with the other salad ingredients.
  12. 12Pour the prepared dressing generously over all the ingredients.
  13. 13Thoroughly toss the salad using a pair of wooden tongs, ensuring all ingredients are well coated.
  14. 14Scoop the finished carrot salad into a clean serving bowl, garnish with a sprinkle of white sesame seeds and a few fresh cilantro leaves, and serve with chopsticks.
