- 2-3 carrots
- Small amount of red onion or shallots
- Generous handful of fresh cilantro
- Coarsely crushed or chopped peanuts
- 1 block firm tofu
- Black pepper to taste

- 1 spoonful red chilli flakes

Method
- 1Peel and julienne raw carrots into long, thin strips.
- 2Thinly slice a small red onion or shallot.
- 3In a small bowl, combine light soy sauce, sesame oil, honey, chilli sauce, apple cider vinegar, and red chilli flakes.
- 4Whisk the dressing ingredients thoroughly until well combined.
- 5Cut the block of tofu into small, bite-sized cubes.
- 6Place tofu cubes in a bowl, season with black pepper and salt, and dust with cornstarch or flour to coat evenly.
- 7Gently toss the tofu by hand to ensure full coverage.
- 8Heat a small amount of cooking oil in a stainless steel pan.
- 9Add the coated tofu cubes to the hot pan and pan-fry until golden brown and slightly crispy on all sides, stirring occasionally with a wooden utensil.
- 10Place the julienned carrots, sliced onions, chopped cilantro, and crushed peanuts into a large bowl.
- 11Add the fried tofu pieces to the bowl with the other salad ingredients.
- 12Pour the prepared dressing generously over all the ingredients.
- 13Thoroughly toss the salad using a pair of wooden tongs, ensuring all ingredients are well coated.
- 14Scoop the finished carrot salad into a clean serving bowl, garnish with a sprinkle of white sesame seeds and a few fresh cilantro leaves, and serve with chopsticks.
