Ingredients
  • 3 thick slices cobia fish
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons cooking oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallots
  • 100g pork belly
  • 200ml coconut water
  • 2 whole red chilies
Method
  1. 1Marinate cobia steaks with salt, pepper, and fish sauce; let sit for a few hours.
  2. 2Prepare caramel sauce by heating sugar and cooking oil until amber.
  3. 3Sauté minced garlic and shallots in the caramel sauce.
  4. 4Sear marinated fish on both sides in the pan until golden.
  5. 5Transfer seared fish to a clay pot.
  6. 6Cut pork belly into bite-sized pieces and sear in the same pan.
  7. 7Place seared pork belly with fish in the clay pot.
  8. 8Pour in coconut water (or hot water).
  9. 9Braise the fish on low heat until liquid reduces and thickens.
  10. 10Garnish with whole red chilies.
  11. 11Serve with hot steamed rice and blanched vegetables.
