Ingredients
- 3 thick slices cobia fish
- 0.5 teaspoon salt
- 0.5 teaspoon ground black pepper
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons cooking oil
- 1 tablespoon minced garlic
- 1 tablespoon minced shallots
- 100g pork belly
- 200ml coconut water
- 2 whole red chilies
Method
- 1Marinate cobia steaks with salt, pepper, and fish sauce; let sit for a few hours.
- 2Prepare caramel sauce by heating sugar and cooking oil until amber.
- 3Sauté minced garlic and shallots in the caramel sauce.
- 4Sear marinated fish on both sides in the pan until golden.
- 5Transfer seared fish to a clay pot.
- 6Cut pork belly into bite-sized pieces and sear in the same pan.
- 7Place seared pork belly with fish in the clay pot.
- 8Pour in coconut water (or hot water).
- 9Braise the fish on low heat until liquid reduces and thickens.
- 10Garnish with whole red chilies.
- 11Serve with hot steamed rice and blanched vegetables.
