- One packet shirataki noodles
- About 1-2 tablespoons sesame oil
- Approximately 1/4 cup finely diced red onion
- About 1/4 cup each diced green bell pepper
- About 1/4 cup each diced red bell pepper
- Approximately 1 cup sliced white button mushrooms
- About 1 teaspoon minced ginger
- About 1 cup firm tofu, cubed into small pieces
- Approximately 2 tablespoons dark soy sauce
- About 1-2 tablespoons sriracha sauce
- About 1 tablespoon peanut butter
- About 1 tablespoon tahini
- About 1 teaspoon chilli flakes
- A pinch salt, to taste
- Approximately 1/4 cup hot water
- About 1 tablespoon lemon juice
- A few fresh basil leaves, roughly chopped
- A sprinkle sesame seeds, for garnish
- A handful crushed peanuts, for garnish
Method
- 1Open a packet of shirataki noodles, empty them into a metal strainer, and rinse thoroughly under cold tap water, using hands to separate them.
- 2Place a red cast iron pan on a stovetop and heat it, then drizzle sesame oil into the pan.
- 3Add diced red onions, followed by diced green bell peppers and red bell peppers, and sauté with a wooden spoon.
- 4Add sliced mushrooms and minced ginger to the pan, stir, and sauté with the other vegetables for a few minutes.
- 5Introduce cubed tofu pieces to the pan, gently mix with the sautéing vegetables, and cook for about 2-3 minutes to warm through.
- 6In a separate clear glass cup, combine dark soy sauce, sriracha sauce, a spoonful of peanut butter, tahini, chili flakes, and a pinch of salt.
- 7Add hot water to the sauce mixture and vigorously stir with a spoon until all ingredients are well combined into a smooth, creamy, orange-brown sauce.
- 8Add the rinsed shirataki noodles directly into the pan with the sautéed vegetables and tofu.
- 9Pour the prepared sauce over everything in the pan, then stir thoroughly with the wooden spoon, ensuring the noodles and vegetables are evenly coated.
- 10Add a splash of lemon juice and some fresh basil leaves to the pan, and give the dish one last stir.
- 11Scoop the finished Chilli Ramen from the pan into a white ceramic bowl.
- 12Garnish the dish generously with white sesame seeds, crunchy crushed peanuts, and fresh green basil leaves.
