Ingredients
- Approximately 2 cups finely chopped cabbage
- About 1/2 cup finely shredded red carrots
- A small handful thinly sliced red onions
- About 1-2 tablespoons crushed ginger, garlic, and green chilies mixture
- Freshly ground black pepper, a few turns of a grinder
- Approximately 1/2 cup gram flour (besan)
- Approximately 1/2 cup rice flour
- Salt to taste
- A small handful chopped spring onion greens
- Water as needed
- Approximately 1/4 cup red chili sauce
- Approximately 1/4 cup tomato ketchup
- About 2-3 tablespoons dark soy sauce
- About 1 tablespoon white vinegar
- About 1 tablespoon cornflour
- About 1-2 tablespoons cooking oil
- About 1 tablespoon finely minced garlic
- A sprinkle of white sesame seeds
Method
- 1Combine chopped cabbage, shredded carrots, and sliced red onions in a large bowl.
- 2Add crushed ginger, garlic, green chilies, and black pepper to the bowl.
- 3Spoon in gram flour, rice flour, and salt, then mix the ingredients by hand.
- 4Add chopped spring onion greens, then gradually pour in water and combine thoroughly with a spatula to form a thick batter.
- 5Prepare the dipping sauce by combining red chili sauce, tomato ketchup, dark soy sauce, white vinegar, salt, black pepper, and cornflour in a ramekin.
- 6Add water to the sauce mixture and stir to create a smooth slurry.
- 7Grease a non-stick tawa with oil and heat it.
- 8Place dollops of the vegetable batter onto the hot tawa and flatten them into small, round pancake-like shapes.
- 9Cook the chillas on medium heat, flipping until golden brown and crispy on both sides.
- 10Simultaneously, heat cooking oil in a stainless steel pan and sauté minced garlic until fragrant.
- 11Pour the prepared sauce slurry into the pan with the garlic.
- 12Add water to the sauce to adjust to the desired consistency.
- 13Sprinkle white sesame seeds and chopped spring onion greens into the sauce, then stir and simmer until it thickens slightly.
- 14Serve the cooked vegetable chillas with the dipping sauce.
