Ingredients
  • 1 1/4 c. oat flour
  • 1/4 c. brown sugar
  • 3 tbsp. granulated sugar
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3 tbsp. unsweetened plant-based milk (almond milk)
  • 1 tsp. vanilla extract
  • 2 1/2 tbsp. softened margarine or vegan butter
  • 1/4 c. vegan chocolate chips
  • 1/4 c. vegan marshmallows PLUS a few extra for topping
Method
  1. 1Pour oat flour, white sugar, brown sugar, baking soda, and salt into a clear glass mixing bowl and thoroughly mix them together using a wooden spoon.
  2. 2Add almond milk, vanilla extract, and softened margarine to the center of the dry mixture in the bowl.
  3. 3Gradually mix the wet ingredients and margarine into the dry mixture using a wooden spoon until a thick, uniform, light brown cookie dough forms.
  4. 4Pour chocolate chips and mini marshmallows into the dough and gently fold and mix them in until evenly distributed.
  5. 5Cover the bowl containing the cookie dough with a clear lid and chill for 10 minutes.
  6. 6After chilling, briefly mix the dough again.
  7. 7Using two spoons, place generous scoops of the dough onto a baking sheet lined with parchment paper, forming five golf ball-sized cookies.
  8. 8Place the baking sheet into an oven and bake at 380°F (193°C) until the cookies are golden-brown with marshmallows on top slightly melted and toasted.
  9. 9Serve the finished cookies warm, optionally paired with a cold beverage.
