Ingredients
- 1 1/4 c. oat flour
- 1/4 c. brown sugar
- 3 tbsp. granulated sugar
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3 tbsp. unsweetened plant-based milk (almond milk)
- 1 tsp. vanilla extract
- 2 1/2 tbsp. softened margarine or vegan butter
- 1/4 c. vegan chocolate chips
- 1/4 c. vegan marshmallows PLUS a few extra for topping
Method
- 1Pour oat flour, white sugar, brown sugar, baking soda, and salt into a clear glass mixing bowl and thoroughly mix them together using a wooden spoon.
- 2Add almond milk, vanilla extract, and softened margarine to the center of the dry mixture in the bowl.
- 3Gradually mix the wet ingredients and margarine into the dry mixture using a wooden spoon until a thick, uniform, light brown cookie dough forms.
- 4Pour chocolate chips and mini marshmallows into the dough and gently fold and mix them in until evenly distributed.
- 5Cover the bowl containing the cookie dough with a clear lid and chill for 10 minutes.
- 6After chilling, briefly mix the dough again.
- 7Using two spoons, place generous scoops of the dough onto a baking sheet lined with parchment paper, forming five golf ball-sized cookies.
- 8Place the baking sheet into an oven and bake at 380°F (193°C) until the cookies are golden-brown with marshmallows on top slightly melted and toasted.
- 9Serve the finished cookies warm, optionally paired with a cold beverage.
