Ingredients
- 1/2 Cup Urad Dal (split black gram with skin)
- 1 Cup Rice
- 1/8 Cup Ghee for cooking
- Extra Ghee for serving
- 1 Teaspoon Cumin seeds (whole)
- 2 Dried Red Chilies (whole)
- 2-3 Cloves
- 2-3 Cinnamon sticks
- 2-3 Cardamom pods
- 1/2 Teaspoon Asafoetida powder
- 1 Tablespoon Ginger, grated or julienned
- 1/3 Cup Onion, finely chopped
- 1 Teaspoon Red Chili Powder
- 1 Teaspoon Turmeric powder
- 1 1/2 Cup Water
- 2 Teaspoons Salt
- 1 Teaspoon Garam Masala
Method
- 1Rinse 1/2 cup urad dal thoroughly with water and soak for 1 hour.
- 2Rinse 1 cup rice with water until clean and drain.
- 3Melt 1/8 cup ghee in a pressure cooker.
- 4Add 1 teaspoon whole cumin seeds, 2 whole dried red chilies, a few pieces of clove, cinnamon, and cardamom, then sauté briefly until fragrant.
- 5Stir in 1/2 teaspoon asafoetida powder and 1 tablespoon grated ginger.
- 6Add 1/3 cup finely chopped onion and sauté until light golden brown.
- 7Add the soaked and drained urad dal, 1 teaspoon red chili powder, and 1 teaspoon turmeric powder, then stir well for about a minute until the dal slightly toasts.
- 8Add the washed and drained rice to the pressure cooker and stir it with the dal and spices.
- 9Pour in 1 1/2 cups water, 2 teaspoons salt, and 1 teaspoon garam masala, then stir to combine all ingredients.
- 10Close the pressure cooker with its lid and whistle, then cook for 2 whistles.
- 11Allow the pressure to release naturally before opening the lid.
- 12Serve the cooked urad dal khichdi hot, drizzled with extra ghee.
