Ingredients
  • 1/2 Cup Urad Dal (split black gram with skin)
  • 1 Cup Rice
  • 1/8 Cup Ghee for cooking
  • Extra Ghee for serving
  • 1 Teaspoon Cumin seeds (whole)
  • 2 Dried Red Chilies (whole)
  • 2-3 Cloves
  • 2-3 Cinnamon sticks
  • 2-3 Cardamom pods
  • 1/2 Teaspoon Asafoetida powder
  • 1 Tablespoon Ginger, grated or julienned
  • 1/3 Cup Onion, finely chopped
  • 1 Teaspoon Red Chili Powder
  • 1 Teaspoon Turmeric powder
  • 1 1/2 Cup Water
  • 2 Teaspoons Salt
  • 1 Teaspoon Garam Masala
Method
  1. 1Rinse 1/2 cup urad dal thoroughly with water and soak for 1 hour.
  2. 2Rinse 1 cup rice with water until clean and drain.
  3. 3Melt 1/8 cup ghee in a pressure cooker.
  4. 4Add 1 teaspoon whole cumin seeds, 2 whole dried red chilies, a few pieces of clove, cinnamon, and cardamom, then sauté briefly until fragrant.
  5. 5Stir in 1/2 teaspoon asafoetida powder and 1 tablespoon grated ginger.
  6. 6Add 1/3 cup finely chopped onion and sauté until light golden brown.
  7. 7Add the soaked and drained urad dal, 1 teaspoon red chili powder, and 1 teaspoon turmeric powder, then stir well for about a minute until the dal slightly toasts.
  8. 8Add the washed and drained rice to the pressure cooker and stir it with the dal and spices.
  9. 9Pour in 1 1/2 cups water, 2 teaspoons salt, and 1 teaspoon garam masala, then stir to combine all ingredients.
  10. 10Close the pressure cooker with its lid and whistle, then cook for 2 whistles.
  11. 11Allow the pressure to release naturally before opening the lid.
  12. 12Serve the cooked urad dal khichdi hot, drizzled with extra ghee.
