Ingredients
- 2 cups all-purpose flour
- 1 tsp white salt
- 1 tsp cumin seeds
- 2-3 tablespoons cooking oil
- Water for kneading dough
- 2 cups boiled and mashed potatoes
- 1 medium onion chopped
- 1/2 cup green peas
- 1-2 cloves chopped garlic
- 1-2 chopped green chilies
- 1 tbsp red chili powder
- 1 tbsp turmeric powder
- 1 tbsp cumin powder
- 1 tbsp kasoori methi
- A handful fresh chopped coriander leaves
- Adequate cooking oil for deep frying
- Maida and water paste
- Salt to taste
- Cooking oil for filling
- A splash of water
Method
- 1Add salt, cumin seeds, and 2-3 tablespoons of cooking oil to the all-purpose flour, then mix and gradually add water to knead into a smooth, pliable dough.
- 2Set the dough aside to rest.
- 3Heat cooking oil in a pan on a gas stove.
- 4Add chopped garlic, cumin seeds, chopped green chilies, and chopped onions to the hot oil and sauté until onions are translucent.
- 5Add red chili powder, kasoori methi, cumin powder, turmeric powder, and salt to the pan, then introduce a splash of water to create a paste-like consistency.
- 6Add green peas and mix them in.
- 7Add boiled and mashed potatoes to the pan, then stir and mash the mixture until a thick, uniform potato masala is formed.
- 8Stir fresh chopped coriander leaves into the filling.
- 9Take a portion of dough and roll it out into a thin, flat, circular shape.
- 10Place a long, cylindrical strip of the potato filling along one edge of the rolled dough.
- 11Fold the dough over the filling and tightly roll it to fully encase the masala, forming a long, dough-wrapped cylinder, then press the ends to seal them.
- 12Insert toothpicks at regular intervals along the cylinder and cut the cylinder into individual, bite-sized pieces between them.
- 13Dip each cut piece into a prepared mixture of maida and water, ensuring it is fully coated.
- 14Heat cooking oil in a deep pan.
- 15Carefully place the coated samosa rolls into the hot oil for deep frying until golden brown and crispy on all sides.
