Method
  1. 1Thinly slice red onion, zucchini, eggplant, yellow bell pepper, and red bell pepper.
  2. 2Sauté the sliced red onion in a hot pan until caramelized to a deep golden-brown color.
  3. 3Grill the sliced zucchini, eggplant, and bell peppers on a hot grill pan with a small amount of oil until they have distinct char marks and soften.
  4. 4Spread a generous layer of mayonnaise on one side of a thick slice of brioche bread.
  5. 5Spoon caramelized onions onto the mayo-covered bread, then carefully place sun-dried tomatoes over the onions.
  6. 6Layer the grilled zucchini slices, then grilled eggplant slices, followed by fresh green lettuce leaves.
  7. 7Arrange the grilled red and yellow bell peppers on top of the lettuce.
  8. 8Spread mayonnaise generously on one side of another thick slice of brioche bread, then place it mayo-side down on top of the assembled layers.
