- 2Sauté the sliced red onion in a hot pan until caramelized to a deep golden-brown color.
- 3Grill the sliced zucchini, eggplant, and bell peppers on a hot grill pan with a small amount of oil until they have distinct char marks and soften.
- 4Spread a generous layer of mayonnaise on one side of a thick slice of brioche bread.
- 5Spoon caramelized onions onto the mayo-covered bread, then carefully place sun-dried tomatoes over the onions.
- 6Layer the grilled zucchini slices, then grilled eggplant slices, followed by fresh green lettuce leaves.
- 7Arrange the grilled red and yellow bell peppers on top of the lettuce.
- 8Spread mayonnaise generously on one side of another thick slice of brioche bread, then place it mayo-side down on top of the assembled layers.
