- 4 red apples
- 250g dark chocolate
- Splash of vanilla extract (optional)
- Cocoa powder (for garnishing)
- Whole hazelnuts (for garnishing)
Method
- 1Peel and roughly chop four red apples.
- 2Bring water to a boil in a pot, add the chopped apples, and cook for about 15 minutes until very soft.
- 3Melt dark chocolate using a double boiler method, stirring until smooth and glossy, then cool slightly.
- 4Strain the cooked apples to remove water and transfer them to a blender jar.
- 5Add the melted and slightly cooled dark chocolate and an optional splash of vanilla extract to the blender jar with the apples.
- 6Blend the mixture thoroughly until it forms a completely smooth, thick puree resembling chocolate mousse.
- 7Pour the blended chocolate-apple mixture into a round cake tin lined with baking paper.
- 8Place the cake tin in a refrigerator and allow it to set overnight.
- 9Unmould the set chocolate mousse cake from the tin and place it onto a serving plate.
- 10Lightly dust cocoa powder over the cake surface and decoratively place whole hazelnuts on top for garnishing.
