Ingredients
  • 4 red apples
  • 250g dark chocolate
  • Splash of vanilla extract (optional)
  • Cocoa powder (for garnishing)
  • Whole hazelnuts (for garnishing)
Method
  1. 1Peel and roughly chop four red apples.
  2. 2Bring water to a boil in a pot, add the chopped apples, and cook for about 15 minutes until very soft.
  3. 3Melt dark chocolate using a double boiler method, stirring until smooth and glossy, then cool slightly.
  4. 4Strain the cooked apples to remove water and transfer them to a blender jar.
  5. 5Add the melted and slightly cooled dark chocolate and an optional splash of vanilla extract to the blender jar with the apples.
  6. 6Blend the mixture thoroughly until it forms a completely smooth, thick puree resembling chocolate mousse.
  7. 7Pour the blended chocolate-apple mixture into a round cake tin lined with baking paper.
  8. 8Place the cake tin in a refrigerator and allow it to set overnight.
  9. 9Unmould the set chocolate mousse cake from the tin and place it onto a serving plate.
  10. 10Lightly dust cocoa powder over the cake surface and decoratively place whole hazelnuts on top for garnishing.
