Ingredients
- 1 rectangular loaf focaccia bread (about 8-10 inches long)
- 2-3 large firm red tomatoes
- 1-2 medium red onions
- Approximately 1/2 cup all-purpose flour
- Approximately 1/4 cup milk
- A few squirts red chili sauce/ketchup
- Approximately 1 cup panko breadcrumbs
- 1/2 to 1 cup cooking oil
- Approximately 1-2 tablespoons white granulated sugar
- Approximately 1 tablespoon chili oil/dark red sauce
- 1/4 to 1/3 cup green pesto
- Approximately 1/2 cup shredded white cheese (mozzarella or blend)
- Cream cheese/mayonnaise
Method
- 1Slice red tomatoes into thick, circular rounds, making a small round cut-out in the center of some slices.
- 2Combine milk with a few squirts of red chili sauce/ketchup in a small bowl and whisk until a light pink, uniform batter forms.
- 3Dredge each tomato slice in all-purpose flour, then dip into the pink wet batter, and finally coat generously with panko breadcrumbs.
- 4Carefully place the breaded tomato slices into hot cooking oil in a frying pan and fry until golden brown and crispy on both sides, then remove with tongs.
- 5Sauté thinly sliced red onions in a pan until soft and translucent, then sprinkle with white granulated sugar and a spoonful of red chili oil/dark red sauce, stirring continuously until deeply caramelized and reddish-brown.
- 6Slice the rectangular focaccia bread horizontally into two halves, then spread a generous layer of green pesto evenly on the inner surface of both halves and sprinkle liberally with shredded white cheese.
- 7Place the focaccia halves with pesto and cheese on a wire rack and bake in an oven until the cheese is completely melted and bubbly, and the focaccia appears warmed and slightly golden.
- 8Assemble the sandwich by using the bottom half of the focaccia as the base, arranging the crispy fried tomato slices on top of the melted cheese and pesto, and then adding a generous layer of the caramelized onions.
- 9Drizzle a white creamy sauce (likely cream cheese or mayonnaise) decoratively over the entire filling using a piping bag, place the top half of the focaccia onto the layered filling to complete the sandwich, and slice vertically into portions for serving.
