Ingredients
  • 5 cloves garlic
  • 1 oz ginger
  • 1/2 onion
  • Handful chives
  • 5-6 medium tomatoes
  • 4 tbsp plant-based fish sauce
  • 4 tbsp gochugaru
  • 1 tbsp raw sugar
  • 2 tbsp maesilaek
  • 1 tsp sesame seeds
Method
  1. 1Finely chop 5 cloves of garlic and 1 ounce of ginger.
  2. 2Thinly slice 1/2 onion.
  3. 3Cut a handful of chives into 1-inch long pieces.
  4. 4Combine chopped garlic, ginger, sliced onion, and chives in a large mixing bowl.
  5. 5Add 4 tbsp plant-based fish sauce (or Yondu), 4 tbsp gochugaru, 1 tbsp raw sugar, and 2 tbsp maesilaek to the bowl.
  6. 6Thoroughly mix all sauce ingredients until well combined.
  7. 7Slice 5-6 medium red tomatoes into 6 to 8 wedges each.
  8. 8Add the sliced tomatoes to the bowl with the prepared kimchi sauce.
  9. 9Mix the tomatoes and sauce by hand to ensure even coating.
  10. 10Sprinkle 1 teaspoon of sesame seeds over the kimchi and mix gently.
