Ingredients
  • 4 salmon fillets
  • 1/4 to 1/2 cup finely diced shallots
  • 1/4 to 1/2 cup minced garlic
  • 1-2 tablespoons red pepper flakes
  • Cooking oil
  • 2-3 tablespoons tamarind paste
  • 2-3 tablespoons palm sugar
  • 1-2 tablespoons fish sauce
  • 1/4 cup water or broth
  • Crispy fried shallots for garnish
  • Ginger matchsticks for garnish
Method
  1. 1Heat cooking oil in a pan (or wok).
  2. 2Sauté finely diced shallots and minced garlic until fragrant.
  3. 3Add red pepper flakes and stir.
  4. 4Pour in pre-prepared tamarind sauce (made from tamarind paste, palm sugar, fish sauce, water/broth) and bring to a simmer, stirring continuously.
  5. 5Carefully place pre-cooked salmon fillets into the simmering sauce.
  6. 6Baste the salmon with the sauce using a spoon, ensuring it is thoroughly coated.
  7. 7Allow salmon to heat through in the sauce for about a minute.
  8. 8Transfer the salmon fillets to a serving bowl.
  9. 9Generously pour the remaining sauce over the salmon.
  10. 10Garnish with crispy fried shallots and delicate ginger matchsticks.
