Ingredients
- 4 salmon fillets
- 1/4 to 1/2 cup finely diced shallots
- 1/4 to 1/2 cup minced garlic
- 1-2 tablespoons red pepper flakes
- Cooking oil
- 2-3 tablespoons tamarind paste
- 2-3 tablespoons palm sugar
- 1-2 tablespoons fish sauce
- 1/4 cup water or broth
- Crispy fried shallots for garnish
- Ginger matchsticks for garnish
Method
- 1Heat cooking oil in a pan (or wok).
- 2Sauté finely diced shallots and minced garlic until fragrant.
- 3Add red pepper flakes and stir.
- 4Pour in pre-prepared tamarind sauce (made from tamarind paste, palm sugar, fish sauce, water/broth) and bring to a simmer, stirring continuously.
- 5Carefully place pre-cooked salmon fillets into the simmering sauce.
- 6Baste the salmon with the sauce using a spoon, ensuring it is thoroughly coated.
- 7Allow salmon to heat through in the sauce for about a minute.
- 8Transfer the salmon fillets to a serving bowl.
- 9Generously pour the remaining sauce over the salmon.
- 10Garnish with crispy fried shallots and delicate ginger matchsticks.
