- 1 medium-sized sweet potato
- 1-2 large eggs
- 1 slice of cheese
- 1/4 - 1/2 medium tomato

- Cooking oil/spray
Method
- 1Peel one raw, orange sweet potato.
- 2Shave the peeled sweet potato into long, very thin ribbons directly into a hot, black non-stick pan coated with cooking oil/spray.
- 3Arrange the sweet potato ribbons in a single layer to form a circular base in the pan.
- 4Cook the sweet potato on medium heat until softened and lightly crispy, forming a crust.
- 5Crack one or two eggs directly over the cooked sweet potato base.
- 6Gently spread the egg white and yolk with a spatula to cover the entire sweet potato layer.
- 7Place one slice of white cheese on one half of the egg-covered sweet potato.
- 8Sprinkle diced fresh tomatoes over the cheese and adjacent egg area.
- 9Generously sprinkle black pepper over the cheese and tomato fillings.
- 10Using a spatula and chopsticks, carefully fold the omelette in half, encasing the cheese and tomato.
- 11Gently roll the omelette once more to form a compact, cylindrical shape while still cooking in the pan.
- 12Transfer the finished sweet potato omelette from the pan to a white plate.
- 13Cut the omelette into smaller pieces for serving.
