- 2 fully ripe mangoes
- 1/2 cup sabudana
- 500 ml milk (or 2 cups milk)
- 2 tbsp granulated sugar
- Slivered almonds (for garnish, optional)
- Red cherries (for garnish, optional)
- Mishri (optional)
- Condensed milk (optional)
- Amul milk powder (optional)
- Water (for cooking sabudana)
Method
- 1Peel the two ripe mangoes.
- 2Precisely cut one mango into small cubes and set aside for garnish and mixing into the dessert.
- 3Roughly chop the second mango into larger pieces for blending.
- 4Bring water to a boil in a pot on a gas stove.
- 5Add the pre-soaked sabudana to the boiling water and stir, cooking for approximately 8-10 minutes until the pearls become translucent and soft.
- 6Drain the cooked sabudana through a fine-mesh sieve and rinse multiple times with normal or cold water to halt cooking and prevent clumping.
- 7Pour the chilled milk, roughly chopped mango pieces, and two tablespoons of sugar into a mixer grinder jar.
- 8Blend the mixture into a smooth, thick, and vibrant yellow puree.
- 9In a large mixing bowl, combine the rinsed and cooked sabudana with the finely diced mango cubes.
- 10Pour the freshly blended mango-milk puree over the sabudana and mango cubes.
- 11Stir thoroughly with a ladle until all components are well incorporated.
- 12Cover the bowl with cling film and refrigerate for two hours to chill completely, or add ice cubes for immediate consumption.
- 13Scoop the chilled dessert into individual clear glass mugs.
- 14Garnish each serving with a generous sprinkle of additional small mango cubes, slivered almonds, and a bright red cherry on top.
