- 1Heat a large iron wok (kadai) filled with fine black sand or gravel.
- 2Place a portion of flat rice flakes onto a small metal sieve with a handle.
- 3Immerse the sieve with flat rice flakes into the hot black sand in the kadai, shaking and tossing to roast them quickly.
- 4Remove the sieve and expertly sift the hot sand back into the kadai, leaving the roasted flat rice flakes in the sieve.
- 5Pour the roasted flat rice flakes into a flat metal plate.
- 6Repeat the roasting process with a mix of puffed rice and small yellow lentils, then add them to the plate.
- 7Add a handful of roasted peanuts, a spoonful of chopped green chilies, and a spoonful of chopped onions to the plate.
- 8Sprinkle red spice powder and salt over the ingredients on the plate.
- 9Thoroughly mix all the ingredients on the plate with bare hands.
- 10Scoop the freshly mixed bhel puri into a small paper cone.
- 11Serve immediately as a quick snack.
