  • Several large onions
  • 1 cup short-grain white rice
  • 1/2 cup diced tomatoes
  • 1/2 cup mixed fresh herbs (parsley, mint)
  • 1.5 lbs ground beef
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried mint
  • 3 tbsp tomato paste
  • 3 tbsp olive oil
  • 1 tbsp pomegranate molasses
  • 1 tbsp lemon juice
  • 3 cups water
Method
  1. 1Trim and score onions, then peel and separate layers.
  2. 2Boil onion layers until softened and translucent.
  3. 3Combine uncooked rice, diced tomatoes, fresh herbs, ground beef, and spices for the filling.
  4. 4Carefully stuff each softened onion layer with the prepared filling.
  5. 5Arrange stuffed onions tightly in a large pot or dutch oven.
  6. 6Whisk together tomato paste, olive oil, pomegranate molasses, lemon juice, and water for the sauce.
  7. 7Pour the sauce over the stuffed onions in the pot.
  8. 8Simmer covered for 1.5 to 2 hours until tender and cooked through.
  9. 9Serve hot.
