- Several large onions
- 1 cup short-grain white rice
- 1/2 cup diced tomatoes
- 1/2 cup mixed fresh herbs (parsley, mint)
- 1.5 lbs ground beef
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried mint
- 3 tbsp tomato paste
- 3 tbsp olive oil
- 1 tbsp pomegranate molasses
- 1 tbsp lemon juice
- 3 cups water
Method
- 1Trim and score onions, then peel and separate layers.
- 2Boil onion layers until softened and translucent.
- 3Combine uncooked rice, diced tomatoes, fresh herbs, ground beef, and spices for the filling.
- 4Carefully stuff each softened onion layer with the prepared filling.
- 5Arrange stuffed onions tightly in a large pot or dutch oven.
- 6Whisk together tomato paste, olive oil, pomegranate molasses, lemon juice, and water for the sauce.
- 7Pour the sauce over the stuffed onions in the pot.
- 8Simmer covered for 1.5 to 2 hours until tender and cooked through.
- 9Serve hot.
