Ingredients
  • Generous amount of oil
  • 1-2 cups thinly sliced red onions
  • 4-5 cups finely shredded green cabbage
  • 1/2 cup small dark brown spherical items (spice blend/masala/fried bits)
  • 4-5 cups dry weight pre-cooked thin noodles
  • 1/2-1 cup vibrant green paste
  • 1/4-1/2 cup dark liquid sauce (e.g., soy sauce)
Method
  1. 1Heat a generous amount of oil in a large wok over high flame.
  2. 2Add thinly sliced red onions to the hot oil and quickly stir-fry until translucent and slightly softened.
  3. 3Introduce shredded green cabbage to the wok and vigorously stir-fry with the onions.
  4. 4Add the small dark brown spherical ingredients to the stir-frying vegetables and mix them in.
  5. 5Place pre-cooked thin noodles on top of the cooked vegetables.
  6. 6Spread the vibrant green paste over the noodles.
  7. 7Drizzle the dark liquid sauce over the noodles.
  8. 8Intensely stir-fry and toss all ingredients together using both a metal ladle and a flat spatula/wooden stick until thoroughly combined and evenly coated.
  9. 9Continuously lift and toss the dish, generating steam, to cook everything through and distribute the flavors.
  10. 10Swiftly scoop the chowmein out of the wok using a large flat spatula and transfer it into a metallic serving container or plate.
