Ingredients
  • Butter, generous amount
  • Beaten egg mixture
  • Finely chopped green chilies
  • Onions
  • Fresh cilantro
  • Two square cheese slices
  • White sauce (mayonnaise), a spiral
  • Crushed instant noodles
  • Noodle seasoning powder, a dash
  • Pre-made round flatbread
  • Orange-colored thick sauce or chutney
  • Fresh chopped cilantro
Method
  1. 1Melt a large chunk of butter on a hot tawa, creating a bubbling pool.
  2. 2Pour the beaten egg mixture, enriched with chopped vegetables, onto the melted butter to form a round omelette base.
  3. 3Carefully place two slices of cheese on top of the cooking omelette.
  4. 4Squirt a generous spiral of white creamy sauce (possibly mayonnaise) over the cheese.
  5. 5Sprinkle crushed instant noodles over the creamy sauce and cheese, followed by a dash of noodle seasoning.
  6. 6Place a pre-made, round flatbread firmly on top of the cooking omelette, pressing it down to adhere.
  7. 7Using a large metal spatula, skillfully flip the entire omelette-flatbread assembly to cook the other side until golden brown and slightly crispy.
  8. 8Generously spread the orange-colored sauce/chutney over the cooked omelette side.
  9. 9Use a gas torch to flambé the orange sauce and omelette, caramelizing the sauce and further melting the cheese.
  10. 10During torching, hold more butter directly over the flame and allow it to melt and drip onto the omelette for richness.
  11. 11Garnish the omelette with fresh chopped cilantro once desired charring and melting are achieved.
  12. 12Lift the finished omelette with a large spatula and serve on a simple white paper plate.
