Method
- 1Sift and whisk dry cake ingredients: 0.33 cup all-purpose flour, 4 teaspoons sugar, 0.25 teaspoon baking soda, and 0.25 teaspoon salt into a clear glass bowl.
- 2Add 3.5 tablespoons whole milk, 0.25 teaspoon vanilla extract, 3 tablespoons oil, 0.5 teaspoon lemon juice, and 3 egg yolks to the dry mixture and whisk vigorously until a smooth batter is formed.
- 3In a separate bowl, beat 4 egg whites with an electric mixer until they begin to foam, then gradually add 3 tablespoons of sugar while continuing to beat until stiff, glossy meringue peaks are achieved.
- 4Gently fold a portion of the meringue into the main cake batter until light and airy, then pour into a rectangular baking pan lined with parchment paper and spread evenly.
- 5Bake the cake at 325°F (160°C) until golden brown and spongy, then immediately flip onto a cooling rack, carefully peel off the parchment paper, and cool completely.
