Ingredients
  • 1/2 cup browned butter
  • 1/2 cup strawberry jam
  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 cup milk
  • 1/4 cup freeze-dried strawberry powder (divided)
  • 8 oz cream cheese
  • 3 cups powdered sugar
  • 1/4 cup sprinkles
Method
  1. 1Preheat oven to 350°F (175°C). Pour browned butter into a large mixing bowl.
  2. 2Add strawberry jam and eggs to the bowl. Mix with an electric hand mixer until pink and frothy.
  3. 3Add granulated sugar and mix until thoroughly combined.
  4. 4Gradually add flour, then milk and half of the freeze-dried strawberry powder. Mix until batter is smooth and light pink.
  5. 5Pour batter into a parchment-lined rectangular baking pan and bake for 30-40 minutes, or until a toothpick inserted comes out clean.
  6. 6While cake cools, prepare frosting: Combine cream cheese, a splash of milk (about 2-3 tbsp), and powdered sugar in a separate bowl.
  7. 7Mix frosting with an electric hand mixer until smooth.
  8. 8Add remaining freeze-dried strawberry powder to the frosting and mix to create a light pink glaze.
  9. 9Pour the strawberry glaze evenly over the cooled cake.
  10. 10Decorate with sprinkles and fresh flowers as desired.
