Ingredients
- 1 cup small soya chunks
- 1.5 cups sliced brown mushrooms
- 1 cup diced red bell pepper
- 1 cup sliced yellow bell pepper
- 1 cup small broccoli florets
- 1 large red onion
- 1 tbsp chopped garlic
- 4 tbsp soy sauce
- 1 tbsp hot sauce
- 1 tbsp tomato ketchup
- 1 tsp apple cider vinegar
- 1 tsp sesame seed oil
- 1 tbsp brown sugar
- 2 tbsp cornstarch
- 4 tbsp cold water
- 1.5 tsp salt
- 0.25 tsp black pepper
- 5 tbsp cooking oil
- Green onions for garnish
- Toasted sesame seeds for garnish
Method
- 1Boil 1 cup soya chunks with 1 tsp salt for 10 minutes, then drain, rinse with cold water, and gently squeeze.
- 2Marinate boiled soya chunks with 1 tbsp cornstarch and 1 tbsp soy sauce.
- 3Prepare the sauce by combining 3 tbsp soy sauce, 1 tbsp hot sauce, 1 tbsp tomato ketchup, 1 tsp apple cider vinegar, 1 tsp sesame seed oil, 1 tbsp brown sugar, and ½ cup water or broth.
- 4Prepare a cornstarch slurry by mixing 1 tbsp cornstarch with 4 tbsp cold water.
- 5Heat 5 tbsp oil in a wok over medium-high heat. Add marinated soya chunks, spread evenly, and fry until golden brown. Remove and set aside.
- 6Sauté diced red onion in the same pan, then add 1 tbsp chopped garlic and stir-fry briefly.
- 7Add sliced mushrooms and stir-fry on high heat until all water evaporates and they brown.
- 8Add red bell pepper, yellow bell pepper, broccoli florets, and sliced red onion. Season with ½ tsp salt and ¼ tsp black pepper, then stir-fry on high heat until tender-crisp.
- 9Return fried soya chunks to the pan. Add the prepared sauce, bring to a simmer, then stir in the cornstarch slurry to thicken.
- 10Garnish with fresh green onions and toasted sesame seeds before serving.
