Ingredients
  • 1 cup small soya chunks
  • 1.5 cups sliced brown mushrooms
  • 1 cup diced red bell pepper
  • 1 cup sliced yellow bell pepper
  • 1 cup small broccoli florets
  • 1 large red onion
  • 1 tbsp chopped garlic
  • 4 tbsp soy sauce
  • 1 tbsp hot sauce
  • 1 tbsp tomato ketchup
  • 1 tsp apple cider vinegar
  • 1 tsp sesame seed oil
  • 1 tbsp brown sugar
  • 2 tbsp cornstarch
  • 4 tbsp cold water
  • 1.5 tsp salt
  • 0.25 tsp black pepper
  • 5 tbsp cooking oil
  • Green onions for garnish
  • Toasted sesame seeds for garnish
Method
  1. 1Boil 1 cup soya chunks with 1 tsp salt for 10 minutes, then drain, rinse with cold water, and gently squeeze.
  2. 2Marinate boiled soya chunks with 1 tbsp cornstarch and 1 tbsp soy sauce.
  3. 3Prepare the sauce by combining 3 tbsp soy sauce, 1 tbsp hot sauce, 1 tbsp tomato ketchup, 1 tsp apple cider vinegar, 1 tsp sesame seed oil, 1 tbsp brown sugar, and ½ cup water or broth.
  4. 4Prepare a cornstarch slurry by mixing 1 tbsp cornstarch with 4 tbsp cold water.
  5. 5Heat 5 tbsp oil in a wok over medium-high heat. Add marinated soya chunks, spread evenly, and fry until golden brown. Remove and set aside.
  6. 6Sauté diced red onion in the same pan, then add 1 tbsp chopped garlic and stir-fry briefly.
  7. 7Add sliced mushrooms and stir-fry on high heat until all water evaporates and they brown.
  8. 8Add red bell pepper, yellow bell pepper, broccoli florets, and sliced red onion. Season with ½ tsp salt and ¼ tsp black pepper, then stir-fry on high heat until tender-crisp.
  9. 9Return fried soya chunks to the pan. Add the prepared sauce, bring to a simmer, then stir in the cornstarch slurry to thicken.
  10. 10Garnish with fresh green onions and toasted sesame seeds before serving.
