Ingredients
- 205 g bread flour
- 15 g granulated sugar
- 2 g instant yeast
- 2 g salt
- 90 g cold water
- 45 g cold milk
- 14 g unsalted butter (for dough)
- 14 g unsalted butter (for filling)
- 25 g chopped fresh spinach
- 50 g chopped bacon
- 85 g shredded cheese
Method
- 1Measure 205 g bread flour, 15 g granulated sugar, 2 g instant yeast, and 2 g salt into a stand mixer bowl.
- 2Add 90 g cold water and 45 g cold milk to the dry ingredients, stirring initially with a wooden spoon.
- 3Knead the mixture thoroughly in a stand mixer until the dough forms a smooth, elastic ball.
- 4Incorporate 14 g softened unsalted butter into the dough and continue kneading until fully combined and supple.
- 5Place the dough in a clear glass bowl, cover, and let it rise for 1 hour.
- 6Punch down the risen dough, transfer to a lightly floured surface, and roll into a large, thin rectangular sheet.
- 7Spread 14 g softened unsalted butter evenly over the rolled-out dough.
- 8Sprinkle 25 g chopped fresh spinach, 50 g chopped bacon, and 85 g shredded cheese generously over the buttered dough.
- 9Slice the dough rectangle vertically into numerous narrow strips.
- 10Roll up each strip individually, encapsulating the filling within its spirals.
- 11Arrange the individual rolls in a circular pattern inside a 6-inch springform pan lined with parchment paper.
- 12Cover the assembled bread and let it rise for a second time for about 1 hour.
- 13Bake in an oven at 375°F until it achieves a golden-brown crust.
- 14Cut into the circular loaf and pull apart a section to serve.
