Ingredients
- 4 medium to large boiled potatoes
- 2-3 tablespoons oil
- 1/2 tsp cumin seeds
- 1/2 tsp nigella seeds
- 1/4 tsp black mustard seeds
- 1 small onion
- 2 cloves chopped garlic
- 1 tsp grated ginger
- 1 chopped green chilli
- 1/2 tsp turmeric powder
- 1/4 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1 heaped tsp chaat masala
- 1 teaspoon salt
- Puff pastry sheets
- Shredded cheese
- Chopped cilantro
- 1/4 cup water
Method
- 1Heat oil in a pan and splutter cumin, nigella, and black mustard seeds.
- 2Add chopped onion and fry until pale.
- 3Stir in chopped garlic, green chilies, and grated ginger.
- 4Add a splash of water, then turmeric, red chili, ground coriander, and ground cumin powders; stir on low heat.
- 5Add boiled potatoes and salt, mash, leaving some chunky bits.
- 6Add water, cover, and simmer for five minutes.
- 7Stir in chaat masala and chopped cilantro; adjust seasoning and cool completely.
- 8Oil a muffin pan well.
- 9Cut thawed puff pastry sheets into squares and place into muffin cups.
- 10Stuff each puff pastry cup with cooled potato filling.
- 11Top with shredded cheese and dried parsley.
- 12Bake until golden brown as per pastry package instructions.
