  • 3 cups hot water
  • 4 tablespoons oil
  • 2 teaspoons salt
  • 1.5 teaspoons turmeric powder
  • 1.5 teaspoons cumin seeds
  • 1 dried bay leaf
  • 1 dry red chili
  • ½ teaspoon hing (asafoetida)
  • 1 teaspoon sugar
  • 1 teaspoon grated ginger
  • Chopped coriander leaves
  • 1 medium green zucchini
  • 1 medium yellow zucchini
  • ¼ teaspoon black mustard seeds
  • ¼ teaspoon sesame seeds
  • 1 heaped teaspoon Bharwa Masala
  • 1 small bitter gourd
  • ½ teaspoon chili powder
  • ½ teaspoon coriander powder
  • ½ teaspoon cumin powder
Method
  1. 1Soak 1 cup chana dal in water for 1 hour, then drain.
  2. 2Add soaked dal, 3 cups hot water, 1 teaspoon oil, 1 teaspoon salt, and 1 teaspoon turmeric powder to an Instant Pot; pressure cook for 20 minutes.
  3. 3Heat 1 tablespoon oil in a pan, add ¼ teaspoon cumin seeds, ¼ teaspoon black mustard seeds, ¼ teaspoon sesame seeds, then add chopped green and yellow zucchini.
  4. 4Stir-fry zucchini on medium heat, then add ½ teaspoon turmeric powder, 1 heaped teaspoon Bharwa Masala, and ½ teaspoon salt; cover and cook for 2 minutes.
  5. 5For the dal tempering, heat 2 tablespoons oil, add 1 teaspoon cumin seeds, 1 dried bay leaf, and 1 dry red chili.
  6. 6Add ½ teaspoon hing (asafoetida) and then the cooked dal; bring to a boil.
  7. 7Stir in 1 teaspoon sugar and 1 teaspoon grated ginger; simmer on low heat for 6-10 minutes, then garnish with coriander leaves.
  8. 8For bitter gourd, thinly slice 1 small bitter gourd.
  9. 9Heat 2 tablespoons oil, add bitter gourd slices, ½ teaspoon salt, ½ teaspoon turmeric powder, ½ teaspoon chili powder, ½ teaspoon coriander powder, and ½ teaspoon cumin powder.
  10. 10Stir-fry bitter gourd until crispy and well-cooked.
