Ingredients
- 2 cups whole milk
- 1-2 teaspoons turmeric powder
- 1/4 cup lemon juice
- 2-3 tablespoons cream cheese or mawa
- Small handful chopped walnuts
- Small handful golden raisins
- Pinch salt
- 2-3 tablespoons ghee or cooking oil
- 2-3 cloves chopped garlic
- 1-inch piece chopped ginger
- 1 medium chopped onion
- Small handful walnuts
- 1 small cinnamon stick
- 2-3 green cardamom pods
- 1 bay leaf
- 2-3 medium chopped tomatoes
- 1-2 teaspoons red chili powder
- 1 teaspoon turmeric powder
- Pinch kasuri methi
- Sliced green chilies
- Julienned pickled red onions
- Microgreens or fresh herbs
- Edible flowers
- Thinly sliced fried carrot slices
Method
- 1In a saucepan, heat milk, add turmeric powder, stir until yellow, then add lemon juice to curdle the milk.
- 2Strain the curds through a muslin cloth, squeezing to remove whey and form a solid mass of yellow paneer, then mash until smooth.
- 3In a separate bowl, combine cream cheese (or mawa), chopped walnuts, golden raisins, and a pinch of salt to form the paneer roll filling.
- 4Spread mashed yellow paneer thinly on plastic wrap over a sushi mat, place the filling down the center, and tightly roll into a compact cylinder.
- 5Unwrap the paneer roll and slice it into individual serving pieces.
- 6Heat ghee or oil in a pan, sauté garlic, ginger, onions, walnuts, and whole spices until onions soften, then add chopped tomatoes and cook until broken down.
- 7Flambé the cooked mixture, then transfer to a blender and process until very smooth.
- 8In a clean pan, heat oil, add turmeric and red chili powder, then immediately pour in the blended gravy paste.
- 9Cook and stir the gravy until it thickens and oil separates, then crush and stir in kasuri methi.
- 10Spoon a generous layer of the orange gravy base into a shallow bowl.
- 11Place one or two pieces of the yellow paneer roll on top of the gravy.
- 12Elaborately garnish the dish with sliced green chilies, pickled red onions, microgreens or fresh herbs, edible flowers, and fried carrot slices for an artistic presentation.
