Ingredients
- Approximately 2 cups warm milk
- Small spoonful pre-made curd (starter culture)
- One dried red chili
- One fresh green chili
Method
- 1Take a small, empty mud pot and apply a thin layer of pre-made curd (starter culture) to its inner surface using a wooden spoon.
- 2Ensure approximately 2 cups of milk are warm, slightly above room temperature, especially in winter.
- 3Froth the warm milk by pouring it back and forth between two small steel tumblers from a height several times to aerate it.
- 4Pour the frothed milk into the prepared mud pot.
- 5Add one dried red chili and one fresh green chili directly into the milk, gently dipping them with a wooden spoon.
- 6Cover the mud pot with a matching clay lid.
- 7Allow the curd to set undisturbed, advising against shaking the pot.
