Method
  1. 1Take a small, empty mud pot and apply a thin layer of pre-made curd (starter culture) to its inner surface using a wooden spoon.
  2. 2Ensure approximately 2 cups of milk are warm, slightly above room temperature, especially in winter.
  3. 3Froth the warm milk by pouring it back and forth between two small steel tumblers from a height several times to aerate it.
  4. 4Pour the frothed milk into the prepared mud pot.
  5. 5Add one dried red chili and one fresh green chili directly into the milk, gently dipping them with a wooden spoon.
  6. 6Cover the mud pot with a matching clay lid.
  7. 7Allow the curd to set undisturbed, advising against shaking the pot.
