Ingredients
- 320 g bread flour
- 4 g yeast
- 4 g salt
- 25 g granulated sugar
- 225 g almond milk
- 30 g vegan butter
- 125 g black sesame paste
- 45 g granulated sugar (for sesame paste)
- 35 g adzuki beans (optional)
- Plant based milk to brush
Method
- 1Measure and thoroughly stir 125g black sesame paste with 45g granulated sugar until smooth, then set aside.
- 2In a stand mixer bowl, combine 320g bread flour, 4g yeast, 4g salt, and 25g granulated sugar; briefly stir the dry ingredients.
- 3Pour 225g almond milk into the dry ingredients and mix with a dough hook on low speed until a shaggy dough forms.
- 4Add 30g vegan butter to the dough and continue kneading in the mixer until the dough becomes smooth, elastic, and pulls cleanly from the bowl.
- 5After the first proof, gently punch down the risen dough, transfer it to a lightly floured board, and roll it into a large, thin rectangle.
- 6Evenly spread the prepared black sesame paste mixture over the entire surface of the rolled dough, leaving a small border, and sprinkle with 35g of optional adzuki beans and a light dusting of flour.
- 7Carefully roll the dough tightly from one of the longer sides into a log shape, ensuring the filling is enclosed, and pinch the seam and ends to seal the log.
- 8Place the rolled log seam-side down on the floured board and gently use a rolling pin to flatten it evenly, widening and slightly lengthening it.
- 9Transfer the shaped dough log into an ungreased rectangular loaf pan.
- 10After the second proof, use a silicone brush to apply a plant based milk wash over the top surface of the risen dough.
- 11Bake the loaf until it has a golden-brown crust.
- 12Remove the baked loaf from the pan and transfer it to a wire rack to cool completely.
- 13Slice the cooled bread with a serrated knife to reveal the swirl pattern and serve.
