Method
- 1Add the soaked chia seeds and plain curd to a mixing bowl.
- 2Add grated cucumber, grated carrot, and chopped fresh coriander leaves to the bowl.
- 3Season the mixture with salt, freshly ground black pepper, finely chopped green chili, and jeera powder.
- 4Heat ghee in a small pan, then add mustard seeds, urad dal, peanuts, cashew nuts, and curry leaves, and sauté until fragrant and nuts are lightly roasted.
- 5Pour the hot tempering immediately over the ingredients in the mixing bowl.
- 6Gently and thoroughly mix all the ingredients together until well combined and the tempering is evenly distributed.
- 7Spoon the savory chia pudding into individual serving bowls.
- 8Garnish the dish with fresh chopped coriander leaves and vibrant pomegranate seeds.
