Method
  1. 1Add the soaked chia seeds and plain curd to a mixing bowl.
  2. 2Add grated cucumber, grated carrot, and chopped fresh coriander leaves to the bowl.
  3. 3Season the mixture with salt, freshly ground black pepper, finely chopped green chili, and jeera powder.
  4. 4Heat ghee in a small pan, then add mustard seeds, urad dal, peanuts, cashew nuts, and curry leaves, and sauté until fragrant and nuts are lightly roasted.
  5. 5Pour the hot tempering immediately over the ingredients in the mixing bowl.
  6. 6Gently and thoroughly mix all the ingredients together until well combined and the tempering is evenly distributed.
  7. 7Spoon the savory chia pudding into individual serving bowls.
  8. 8Garnish the dish with fresh chopped coriander leaves and vibrant pomegranate seeds.
