Method
  1. 1Mash potatoes.
  2. 2Mix the soaked sabudana, mashed potatoes, ground peanuts, green chilies, spices, and chopped green herbs to form a cohesive mixture.
  3. 3Form the mixture into round, flattened patties approximately 2-3 inches in diameter.
  4. 4Heat oil in a kadai (wok) to a suitable temperature for deep frying.
  5. 5Carefully place the formed patties into the hot oil.
  6. 6Deep fry the patties, gently turning them with a slotted spoon to ensure even cooking and browning on all sides.
  7. 7Continue frying until the patties transform from a pale yellowish-green to a rich golden-brown color, acquiring a crispy texture.
  8. 8Lift the fried vadas out of the hot oil using a slotted spoon, allowing excess oil to drip back into the kadai.
  9. 9Place the fried vadas on a plate lined with a white paper towel to absorb any remaining oil before serving.
