Ingredients
- 1-2 medium potatoes, peeled and diced
- 1-2 carrots, peeled and diced
- 1 cup green peas
- 1/2 to 3/4 cup sweet corn kernels
- 2 medium red apples, cored and diced
- 3-4 tablespoons mayonnaise
- 2 tablespoons cream
- 1 teaspoon powdered sugar
- Salt to taste
- Crushed black pepper to taste
- A small sprig fresh cilantro leaves
- A sprinkle spice powder (paprika or chaat masala)
- Lettuce leaves for lining
Method
- 1Begin by boiling water in a steel pan on a gas stove.
- 2Add a spoonful of salt to the boiling water.
- 3Add diced potatoes and carrots to the salted boiling water and stir.
- 4Subsequently, add green peas and sweet corn kernels to the same pan.
- 5Cook the vegetables until tender, then remove them from the water using a slotted spoon to drain excess water.
- 6Transfer the hot, cooked vegetables into a large clear glass mixing bowl.
- 7Dice two red apples into medium-sized pieces and add them to the bowl with the cooked vegetables.
- 8In a separate pink bowl, combine mayonnaise, cream, powdered sugar, salt, and freshly crushed black pepper.
- 9Vigorously whisk all dressing ingredients together until a smooth, creamy, and well-combined mixture is formed.
- 10Pour the prepared dressing over the boiled vegetables and diced apples in the large glass bowl.
- 11Use a silicone spatula to thoroughly mix all the ingredients, ensuring the dressing evenly coats every piece of vegetable and fruit.
- 12Line a white serving bowl with fresh, crisp light green lettuce leaves.
- 13Spoon a generous portion of the mixed salad onto the lettuce.
- 14Garnish the salad with a small sprig of fresh cilantro and a light sprinkle of an orange/red colored spice powder.
