- 1 whole head of cauliflower
- 2-3 tablespoons olive oil
- Salt (approx. 1/2 teaspoon for rub, 1 teaspoon for boiling water, 1/4 teaspoon for tahini sauce)
- 1/2 teaspoon crushed black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder or paprika
- 1 tablespoon Dijon mustard
- Garlic powder (to taste)
- Lemon juice (to taste)
- 2-3 tablespoons tahini paste
- 1 teaspoon maple syrup
- Hot water (as needed for sauce)
- A handful of chopped fresh parsley
- A handful of chopped pistachios
Method
- 1Place a stainless steel pot with water on a gas stove and bring it to a boil.
- 2Add approximately 1 teaspoon of salt to the boiling water.
- 3Carefully lower a whole head of cauliflower into the boiling water using tongs and submerge it using a mesh strainer.
- 4Boil the cauliflower for approximately 5 minutes until par-boiled.
- 5Drain the par-boiled cauliflower from the hot water.
- 6In a small cup, pour olive oil, then add salt, crushed black pepper, Italian seasoning, turmeric powder, red chili powder, and Dijon mustard, mixing thoroughly to form a thick paste.
- 7Place the par-boiled cauliflower in a cast iron skillet.
- 8Pour the prepared seasoning rub over the cauliflower and use a silicone brush to spread it evenly over the entire surface.
- 9Place the skillet with the coated cauliflower into an oven and roast at 400°F (200°C) for 30 minutes.
- 10While the cauliflower roasts, in a ramekin, add tahini paste, maple syrup, and a pinch of salt.
- 11Gradually add hot water and whisk with a small metal whisk until the tahini sauce is smooth, creamy, and pourable.
- 12Remove the roasted cauliflower from the oven and place it on a wooden cutting board in its skillet.
- 13Generously drizzle the prepared tahini sauce around the base and over the top of the cauliflower.
- 14Sprinkle chopped fresh parsley and chopped pistachios over the roasted cauliflower.
