  • 1 whole head of cauliflower
  • 2-3 tablespoons olive oil
  • Salt (approx. 1/2 teaspoon for rub, 1 teaspoon for boiling water, 1/4 teaspoon for tahini sauce)
  • 1/2 teaspoon crushed black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder or paprika
  • 1 tablespoon Dijon mustard
  • Garlic powder (to taste)
  • Lemon juice (to taste)
  • 2-3 tablespoons tahini paste
  • 1 teaspoon maple syrup
  • Hot water (as needed for sauce)
  • A handful of chopped fresh parsley
  • A handful of chopped pistachios
Method
  1. 1Place a stainless steel pot with water on a gas stove and bring it to a boil.
  2. 2Add approximately 1 teaspoon of salt to the boiling water.
  3. 3Carefully lower a whole head of cauliflower into the boiling water using tongs and submerge it using a mesh strainer.
  4. 4Boil the cauliflower for approximately 5 minutes until par-boiled.
  5. 5Drain the par-boiled cauliflower from the hot water.
  6. 6In a small cup, pour olive oil, then add salt, crushed black pepper, Italian seasoning, turmeric powder, red chili powder, and Dijon mustard, mixing thoroughly to form a thick paste.
  7. 7Place the par-boiled cauliflower in a cast iron skillet.
  8. 8Pour the prepared seasoning rub over the cauliflower and use a silicone brush to spread it evenly over the entire surface.
  9. 9Place the skillet with the coated cauliflower into an oven and roast at 400°F (200°C) for 30 minutes.
  10. 10While the cauliflower roasts, in a ramekin, add tahini paste, maple syrup, and a pinch of salt.
  11. 11Gradually add hot water and whisk with a small metal whisk until the tahini sauce is smooth, creamy, and pourable.
  12. 12Remove the roasted cauliflower from the oven and place it on a wooden cutting board in its skillet.
  13. 13Generously drizzle the prepared tahini sauce around the base and over the top of the cauliflower.
  14. 14Sprinkle chopped fresh parsley and chopped pistachios over the roasted cauliflower.
