Ingredients
  • Rice paper sheets
  • 1 large carrot, julienned
  • 1/4 of a small head red cabbage, finely sliced/chopped
  • 1/4 to 1/2 green bell pepper, thinly sliced
  • 1/4 to 1/2 red bell pepper, thinly sliced
  • 1/4 to 1/2 yellow bell pepper, thinly sliced
  • 1/4 cup sesame seeds
  • 1/2 cup walnuts
  • 2-3 tablespoons olive oil
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1.5 to 2 medium red onions, roughly chopped
  • 1 tablespoon ginger, chopped
  • 1 tablespoon garlic, chopped
  • 4-5 pieces dried red chillies
  • 2-3 medium tomatoes, roughly chopped
  • Salt to taste
  • A pinch turmeric powder
  • A pinch red chili powder
  • Water
  • A generous handful chives or spring onion greens, finely chopped
Method
  1. 1Julienne the carrots and thinly slice or finely chop the red cabbage, yellow bell pepper, red bell pepper, and green bell pepper.
  2. 2Individually dip round rice paper sheets into water until they become soft, pliable, and translucent.
  3. 3Layer a small amount of each prepared vegetable on a softened rice paper sheet, then fold the bottom, sides, and roll tightly from the bottom up to create a compact dumpling.
  4. 4Dry roast sesame seeds and walnuts in a non-stick pan over medium heat, stirring continuously until fragrant and lightly toasted, then remove and set aside.
  5. 5Add olive oil to the same pan and heat it, then add whole coriander seeds and cumin seeds and briefly sauté until fragrant.
  6. 6Add roughly chopped red onions, chopped ginger, chopped garlic, whole dried red chillies, roughly chopped tomatoes, a pinch of salt, and implied turmeric and chili powder to the pan.
  7. 7Pour a splash of water into the pan, cover it, and cook the vegetables until they are softened.
  8. 8Transfer the cooked vegetable mixture to a blender jar, add the dry-roasted sesame seeds and walnuts, and a little more water, then blend until smooth and thick.
  9. 9Pour the blended soup base back into the pan, add additional salt to taste, stir, and bring to a gentle simmer.
  10. 10Carefully place the prepared rice paper dumplings into the simmering soup and allow them to cook briefly.
  11. 11Ladle the soupy rice paper dumplings into a serving bowl and generously garnish with finely chopped chives or spring onion greens.
