  • 300-400g pizza sauce
  • 50g boconcini cheese
  • 2 tsp olive oil
  • 100g edamame spaghetti noodles
  • 1-2 tbsp brownish powder (fiber/protein supplement)
  • Approximately 1/4 cup half and half cream
  • 20g Parmesan cheese
  • Handful basil
  • Water for boiling
  • 1 sliced grilled chicken breast (optional)
Method
  1. 1Pour pizza sauce, mozzarella balls, and a drizzle of olive oil into a blender cup, then blend until smooth and creamy.
  2. 2Strain the blended sauce through a sieve into a frying pan placed on a stove.
  3. 3Concurrently, boil water in a small saucepan and cook the edamame spaghetti until tender.
  4. 4Stir the brownish powder into the red sauce in the frying pan.
  5. 5Add a splash of half and half cream and another drizzle of olive oil to the sauce, then stir.
  6. 6Grate Parmesan cheese directly into the sauce.
  7. 7Add a splash of starchy pasta water from the boiling spaghetti to the sauce and stir.
  8. 8Drain the cooked spaghetti and transfer it to the frying pan with the sauce, then toss thoroughly to coat.
  9. 9Plate the sauced spaghetti, spoon additional sauce over it, and garnish with more grated Parmesan cheese and fresh basil leaves.
  10. 10Serve with sliced grilled chicken breast as an optional accompaniment.
