Ingredients

  • A few slices of fresh button mushrooms (for garnish)
  • Some finely chopped fresh green herbs (possibly parsley or cilantro, for garnish)
Method
  1. 1Finely chop the red onion, then slice and finely chop the button mushrooms on a wooden cutting board.
  2. 2Melt a spoonful of butter or ghee in a dark grey speckled non-stick pan.
  3. 3Add the chopped onions and garlic to the hot pan and sauté until they soften and turn translucent.
  4. 4Add the finely chopped mushrooms to the pan and cook until they release their moisture, brown, and reduce in volume.
  5. 5Sprinkle chili flakes, dried mixed herbs, and salt into the mushroom mixture and stir well to combine.
  6. 6Add approximately 1 tablespoon of all-purpose flour (Maida) to the mixture and cook for a short time to create a roux with the vegetables.
  7. 7Pour water into the pan and stir continuously to ensure the flour dissolves and prevents lumps, forming a thick sauce.
  8. 8Add fresh cream to the mixture, making it creamier and richer.
  9. 9Introduce pre-boiled quinoa into the pan and mix thoroughly with the creamy mushroom sauce.
  10. 10Grate a generous amount of cheese directly into the pan and stir until it completely melts and integrates into the risotto.
  11. 11Separately, lightly sauté a few slices of button mushrooms in a smaller pan for garnish.
  12. 12Scoop the finished Mushroom Quinoa Risotto into a deep ceramic plate.
