Ingredients

Method
- 1Finely chop the red onion, then slice and finely chop the button mushrooms on a wooden cutting board.
- 2Melt a spoonful of butter or ghee in a dark grey speckled non-stick pan.
- 3Add the chopped onions and garlic to the hot pan and sauté until they soften and turn translucent.
- 4Add the finely chopped mushrooms to the pan and cook until they release their moisture, brown, and reduce in volume.
- 5Sprinkle chili flakes, dried mixed herbs, and salt into the mushroom mixture and stir well to combine.
- 6Add approximately 1 tablespoon of all-purpose flour (Maida) to the mixture and cook for a short time to create a roux with the vegetables.
- 7Pour water into the pan and stir continuously to ensure the flour dissolves and prevents lumps, forming a thick sauce.
- 8Add fresh cream to the mixture, making it creamier and richer.
- 9Introduce pre-boiled quinoa into the pan and mix thoroughly with the creamy mushroom sauce.
- 10Grate a generous amount of cheese directly into the pan and stir until it completely melts and integrates into the risotto.
- 11Separately, lightly sauté a few slices of button mushrooms in a smaller pan for garnish.
- 12Scoop the finished Mushroom Quinoa Risotto into a deep ceramic plate.
- 13Garnish the dish with the sautéed mushroom slices and a sprinkle of fresh green herbs.
