  1. 1Create a small well in the center of the whole wheat flour on a large plate.
  2. 2Pour water into the well from a small steel cup.
  3. 3Mix the flour and water with your hand, kneading to achieve a soft, smooth, and pliable dough, adding small amounts of water as needed.
  4. 4Set the prepared dough aside.
  5. 5Take a small portion of the kneaded dough and roll it between your palms to form a neat ball.
  6. 6Dust the dough ball lightly with dry whole wheat flour.
  7. 7Roll the dough evenly into a thin, circular flatbread using a rolling pin.
  8. 8Preheat a tawa (flat griddle) on a gas stove.
  9. 9Place a rolled flatbread onto the hot tawa.
  10. 10Cook the flatbread on both sides on the tawa until it shows slight bubbling and small brown spots.
  11. 11Transfer the partially cooked flatbread to a metal griller placed directly over an open flame of the gas stove.
  12. 12Carefully move and press the phulka on the direct flame using the griller, causing it to puff up impressively.
