Ingredients
- 1 cup red Thai chilies
- 1 cup white vinegar
- 3 cloves garlic
- 1/2 cup green chilies
Method
- 1Stem red Thai chilies.
- 2Place chilies in a mortar (or blender) and pound into a coarse paste.
- 3Pour in white vinegar.
- 4Mix well until combined.
- 5Pour the Prik Nam Som into a serving bowl.
- 6(Optional) For charred variation, dry roast chilies until charred before pounding.
- 7(Optional) For garlic variation, pound peeled garlic cloves with chilies.
- 8(Optional) For milder heat, deseed chilies before pounding.
- 9(Optional) For sliced variation, slice green chilies and mix directly with vinegar.
