Ingredients
  • 1 cup red Thai chilies
  • 1 cup white vinegar
  • 3 cloves garlic
  • 1/2 cup green chilies
Method
  1. 1Stem red Thai chilies.
  2. 2Place chilies in a mortar (or blender) and pound into a coarse paste.
  3. 3Pour in white vinegar.
  4. 4Mix well until combined.
  5. 5Pour the Prik Nam Som into a serving bowl.
  6. 6(Optional) For charred variation, dry roast chilies until charred before pounding.
  7. 7(Optional) For garlic variation, pound peeled garlic cloves with chilies.
  8. 8(Optional) For milder heat, deseed chilies before pounding.
  9. 9(Optional) For sliced variation, slice green chilies and mix directly with vinegar.
