Ingredients
- Two medium-sized, unpeeled potatoes
- Two wooden skewers
- Approximate equal quantity all-purpose flour
- Approximate equal quantity cornflour
- Water
- A spoonful red chili powder
- A spoonful chaat masala
- A pinch salt
- Sufficient quantity deep frying oil
- Melted butter
- A generous sprinkling peri-peri masala
- Liquid cheese sauce
- A sprinkle chopped green herbs
Method
- 1Insert a wooden skewer lengthwise through the center of each whole, unpeeled potato.
- 2Carefully cut each potato in a spiral fashion around the skewer using a knife.
- 3Gently pull apart and spread the potato slices along the skewer to form the twister shape.
- 4Combine all-purpose flour, cornflour, red chili powder, chaat masala, and salt in a dish.
- 5Gradually incorporate water while stirring to create a smooth, semi-thick batter (slurry).
- 6Fully dip each prepared potato twister on a skewer into the slurry, ensuring all surfaces are coated evenly.
- 7Heat oil in a small pot on a gas stove.
- 8Carefully place the coated potato twister into the hot oil and deep-fry over medium heat.
- 9Occasionally rotate the twister and gently splash with oil to ensure even cooking until golden brown and crispy.
- 10Remove the crispy potato twister from the hot oil using a slotted spoon to drain excess oil.
- 11Place the hot, fried potato twisters on a white serving plate.
- 12Brush melted butter over them using a brush.
- 13Sprinkle a generous amount of peri-peri masala over both twisters.
- 14Drizzle liquid cheese sauce artistically over the twisters from a piping bag.
- 15Sprinkle chopped green herbs to complete the garnish.
