Ingredients
- 8-10 ripe red tomatoes
- 1 small red onion
- 8-10 whole garlic cloves
- 2-3 tablespoons cooking oil
- 1 teaspoon dried oregano
- 1 teaspoon chili flakes
- 1 teaspoon red chili powder
- 1 teaspoon vinegar
- Salt to taste
- Freshly ground black pepper to taste
- 1 tablespoon tomato ketchup
Method
- 1Cut 8-10 ripe red tomatoes in half lengthwise on a chopping board.
- 2Slice one small red onion into thin crescent-shaped pieces.
- 3Heat 2-3 tablespoons of cooking oil in a non-stick frying pan on a gas stove.
- 4Add the sliced onions and 8-10 whole garlic cloves to the hot oil.
- 5Carefully place the halved tomatoes cut-side down in the pan, among the onions and garlic, maintaining a high flame.
- 6Cover the pan with a lid to steam and char the vegetables for a few minutes until softened and slightly charred.
- 7Remove the lid and use tongs to peel the skin off the softened tomatoes.
- 8Use a potato masher to thoroughly mash all the ingredients directly in the pan, creating a chunky sauce.
- 9Add 1 teaspoon dried oregano, 1 teaspoon chili flakes, 1 teaspoon red chili powder, salt to taste, and freshly ground black pepper to taste.
- 10Incorporate a splash of vinegar (approximately 1 teaspoon) and 1 tablespoon of tomato ketchup.
- 11Stir everything together using a spatula until all the ingredients and seasonings are well combined.
