Ingredients
  • 8-10 ripe red tomatoes
  • 1 small red onion

Method
  1. 1Cut 8-10 ripe red tomatoes in half lengthwise on a chopping board.
  2. 2Slice one small red onion into thin crescent-shaped pieces.
  3. 3Heat 2-3 tablespoons of cooking oil in a non-stick frying pan on a gas stove.
  4. 4Add the sliced onions and 8-10 whole garlic cloves to the hot oil.
  5. 5Carefully place the halved tomatoes cut-side down in the pan, among the onions and garlic, maintaining a high flame.
  6. 6Cover the pan with a lid to steam and char the vegetables for a few minutes until softened and slightly charred.
  7. 7Remove the lid and use tongs to peel the skin off the softened tomatoes.
  8. 8Use a potato masher to thoroughly mash all the ingredients directly in the pan, creating a chunky sauce.
  9. 9Add 1 teaspoon dried oregano, 1 teaspoon chili flakes, 1 teaspoon red chili powder, salt to taste, and freshly ground black pepper to taste.
  10. 10Incorporate a splash of vinegar (approximately 1 teaspoon) and 1 tablespoon of tomato ketchup.
  11. 11Stir everything together using a spatula until all the ingredients and seasonings are well combined.
