Method
  1. 1Create a well in the all-purpose flour, add lukewarm water and instant yeast, then mix until dissolved.
  2. 2Bring the flour into the wet mixture with a dough scraper to form a rough dough.
  3. 3Flatten the dough, add salt and oil, then knead by hand for 8-10 minutes until smooth and elastic.
  4. 4Form the dough into a ball, place in a greased bowl, cover, and proof until doubled in size.
  5. 5Punch down the risen dough, remove onto a cornmeal-dusted surface, and divide into two equal portions.
  6. 6Shape each portion into a round ball, cover, and proof again for 15-20 minutes.
  7. 7Flatten one dough ball on a cornmeal-dusted surface and stretch by hand into a circular pizza base.
  8. 8Transfer the pizza base to a pizza pan and gently prick its surface with a fork.
  9. 9Spread pizza sauce evenly over the base, drizzle with cheese sauce, then add a thick layer of shredded mozzarella cheese.
  10. 10Top the pizza with sliced mushrooms, red onion pieces, and red tomato wedges.
  11. 11Bake the pizza until the crust is golden brown and the cheese is bubbly and melted.
  12. 12Garnish the baked pizza with green chives and chili flakes.
  13. 13Cut the pizza into slices and serve.
