Ingredients
- 2 cups all-purpose flour
- Pinch salt
- 1-2 tablespoons melted butter
- Water as needed
- 3 tablespoons cooking oil
- Less than 1 teaspoon cumin seeds
- 1/2 cup green peas
- 1 cup diced potatoes
- Pinch red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Pinch mango powder
- Small handful fresh cilantro
Method
- 1Combine all-purpose flour and salt in a bowl, then add melted butter and mix thoroughly.
- 2Gradually add water and knead the mixture by hand into a firm and smooth dough.
- 3Cover the dough and set it aside to rest for at least 10 minutes.
- 4Heat cooking oil in a non-stick pan on an induction cooktop and add cumin seeds.
- 5Add green peas and diced potatoes to the pan, followed by red chili powder, coriander powder, and salt.
- 6Stir-fry the vegetables for about 2 minutes using a spatula.
- 7Add garam masala, mango powder, and chopped cilantro to the mixture and mix well.
- 8Knead the rested dough again on a countertop and divide it into four equal parts.
- 9Roll out one portion of dough into approximately a 7-inch circular shape.
- 10Place a spoonful of the prepared samosa filling in the center of the rolled-out dough.
- 11Bring the edges of the dough together and seal them in the center to enclose the filling, forming a ball.
- 12Gently roll out the filled dough ball again, then shallow fry it in heated oil in a pan until golden brown on both sides.
