Ingredients
  • 2 cups all-purpose flour
  • Pinch salt
  • 1-2 tablespoons melted butter
  • Water as needed
  • 3 tablespoons cooking oil
  • Less than 1 teaspoon cumin seeds
  • 1/2 cup green peas
  • 1 cup diced potatoes
  • Pinch red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Pinch mango powder
  • Small handful fresh cilantro
Method
  1. 1Combine all-purpose flour and salt in a bowl, then add melted butter and mix thoroughly.
  2. 2Gradually add water and knead the mixture by hand into a firm and smooth dough.
  3. 3Cover the dough and set it aside to rest for at least 10 minutes.
  4. 4Heat cooking oil in a non-stick pan on an induction cooktop and add cumin seeds.
  5. 5Add green peas and diced potatoes to the pan, followed by red chili powder, coriander powder, and salt.
  6. 6Stir-fry the vegetables for about 2 minutes using a spatula.
  7. 7Add garam masala, mango powder, and chopped cilantro to the mixture and mix well.
  8. 8Knead the rested dough again on a countertop and divide it into four equal parts.
  9. 9Roll out one portion of dough into approximately a 7-inch circular shape.
  10. 10Place a spoonful of the prepared samosa filling in the center of the rolled-out dough.
  11. 11Bring the edges of the dough together and seal them in the center to enclose the filling, forming a ball.
  12. 12Gently roll out the filled dough ball again, then shallow fry it in heated oil in a pan until golden brown on both sides.
