Ingredients
- 200 g raw, peeled shrimp (or 18 large shrimp)
- 20 g all-purpose flour (for patty)
- 3 g salt (for patty)
- 1 g black pepper (for patty)
- 1 g garlic powder (for patty)
- 50 g or 1 large egg (whisked, for coating)
- 5 g or 1 tsp milk (for coating)
- 30 g or 1/4 c all-purpose flour (for coating)
- 30 g or 1/2 c panko breadcrumbs (for coating)
- Oil for frying
- 85 g or 1/3 c + 1 tbsp mayonnaise
- 35 g or 2 tbsp sour pickle relish
- 1 g or 1/4 tsp salt (for tartar sauce)
- 1 g or 1/4 tsp black pepper (for tartar sauce)
- 2 g or 1/2 tsp sugar (for tartar sauce)
- 3 g or 1/2 tsp lemon juice
- 2 g or 1 tsp dry or fresh dill
- 20 g romaine lettuce shreds (approx. 2 leaves)
- 2 tomato slices
- 1 burger bun
Method
- 1Finely chop 200 grams of raw, peeled shrimp on a wooden board.
- 2Combine the chopped shrimp with 20 grams all-purpose flour, 3 grams salt, 1 gram black pepper, and 1 gram garlic powder, then mix thoroughly until a sticky, cohesive patty mixture forms.
- 3Shape the shrimp mixture into a thick, round patty.
- 4Prepare three breading stations: a plate with 30 grams all-purpose flour, a bowl with one whisked egg and 5 grams milk, and another plate with 30 grams panko breadcrumbs.
- 5Coat the shrimp patty first in flour, then dip in the egg wash, and finally press it into the panko breadcrumbs until completely covered.
- 6Deep-fry the breaded patty in a pan filled with hot oil until it turns a deep golden brown and develops a crispy exterior on both sides, then remove and drain.
- 7Chop 20 grams of romaine lettuce into fine strips and slice a red tomato into even rounds.
- 8For the tartar sauce, combine 85 grams mayonnaise, 35 grams relish, 1 gram salt, 1 gram black pepper, 3 grams lemon juice, and 2 grams dried dill, then stir until a creamy, speckled sauce is formed.
- 9Spread a generous layer of the freshly made tartar sauce on a toasted burger bun bottom, followed by the chopped lettuce.
- 10Place the crispy, golden-brown shrimp patty on top of the lettuce, then add more tartar sauce to the patty.
- 11Neatly arrange the tomato slices over the sauce, and finally, complete the burger with the toasted top bun.
