Ingredients
- 1 handful fresh cilantro
- 1 handful fresh mint leaves
- 2-3 green chilies
- 2-inch piece ginger
- 2-3 limes
- 4.25 cups water
- 1.5 tsp chaat masala
- 0.5 tbsp dry mango powder
- 1 tsp black salt
- 0.125 tsp asafoetida
- 0.5 tsp roasted cumin powder
- 0.5 tsp salt
- 1 spoonful boondi
Method
- 1Chop cilantro, mint leaves, green chilies, and ginger.
- 2Add chopped cilantro, mint, green chilies, ginger, and 1/4 cup water to a blender jar.
- 3Blend mixture into a fine, smooth green paste.
- 4Transfer green paste to a bowl and add chaat masala, dry mango powder, black salt, asafoetida, and roasted cumin powder.
- 5Mix spices thoroughly into the green paste.
- 6Add 4 cups cold water and stir well.
- 7Squeeze juice from 1-2 limes into the mixture and stir.
- 8Add 1/2 teaspoon regular salt and mix.
- 9Cover and refrigerate Pani for at least 30 minutes to chill.
- 10Strain the chilled Pani through a fine-mesh strainer into another bowl.
- 11Add a spoonful of boondi to the strained Pani as garnish.
