Ingredients
  • 1 handful fresh cilantro
  • 1 handful fresh mint leaves
  • 2-3 green chilies
  • 2-inch piece ginger
  • 2-3 limes
  • 4.25 cups water
  • 1.5 tsp chaat masala
  • 0.5 tbsp dry mango powder
  • 1 tsp black salt
  • 0.125 tsp asafoetida
  • 0.5 tsp roasted cumin powder
  • 0.5 tsp salt
  • 1 spoonful boondi
Method
  1. 1Chop cilantro, mint leaves, green chilies, and ginger.
  2. 2Add chopped cilantro, mint, green chilies, ginger, and 1/4 cup water to a blender jar.
  3. 3Blend mixture into a fine, smooth green paste.
  4. 4Transfer green paste to a bowl and add chaat masala, dry mango powder, black salt, asafoetida, and roasted cumin powder.
  5. 5Mix spices thoroughly into the green paste.
  6. 6Add 4 cups cold water and stir well.
  7. 7Squeeze juice from 1-2 limes into the mixture and stir.
  8. 8Add 1/2 teaspoon regular salt and mix.
  9. 9Cover and refrigerate Pani for at least 30 minutes to chill.
  10. 10Strain the chilled Pani through a fine-mesh strainer into another bowl.
  11. 11Add a spoonful of boondi to the strained Pani as garnish.
