Method
- 1To prepare golgappe, take a clear plastic cup.
- 2Scoop a few crispy puris and sweet and tangy tamarind water into the cup.
- 3Add a ladleful of spicy mint and coriander water to the cup.
- 4Garnish with a lime wedge.
- 5Serve the golgappe with a side of boiled potato and chickpea filling.
- 6To prepare dahi bhalla papdi chaat, place several soft bhallas onto a serving plate.
- 7Add a scoop of white granular topping (grated radish or curd mixture) over the bhallas.
- 8Sprinkle a generous amount of sev over the dish.
- 9Drizzle sweet tamarind chutney (saunth) over the bhallas.
- 10Sprinkle red chili powder, green chaat masala, and black salt as desired.
- 11Crumble crispy papdis onto the dish.
- 12Garnish with chopped green ingredients (coriander and green chilies).
- 13Serve the chaat immediately.
