Method
  1. 1To prepare golgappe, take a clear plastic cup.
  2. 2Scoop a few crispy puris and sweet and tangy tamarind water into the cup.
  3. 3Add a ladleful of spicy mint and coriander water to the cup.
  4. 4Garnish with a lime wedge.
  5. 5Serve the golgappe with a side of boiled potato and chickpea filling.
  6. 6To prepare dahi bhalla papdi chaat, place several soft bhallas onto a serving plate.
  7. 7Add a scoop of white granular topping (grated radish or curd mixture) over the bhallas.
  8. 8Sprinkle a generous amount of sev over the dish.
  9. 9Drizzle sweet tamarind chutney (saunth) over the bhallas.
  10. 10Sprinkle red chili powder, green chaat masala, and black salt as desired.
  11. 11Crumble crispy papdis onto the dish.
  12. 12Garnish with chopped green ingredients (coriander and green chilies).
  13. 13Serve the chaat immediately.
