Ingredients
- 1.5 cups whole wheat flour
- 0.75 cup all-purpose flour
- 1 teaspoon oil (for dough)
- 0.5 teaspoon salt (for dough)
- 1.5 cups water
- 2 cups shredded paneer
- 0.5 teaspoon salt (for filling)
- 0.5 teaspoon cumin seeds
- 0.25 teaspoon chilli flakes
- 1 teaspoon minced ginger
- 2.5 tablespoons cilantro
- 1.5 tablespoons plain yogurt
- 3 teaspoons oil (for cooking)
Method
- 1Combine whole wheat flour, all-purpose flour, 1 tsp oil, and 0.5 tsp salt in a bowl.
- 2Gradually add water and knead into a soft, pliable dough; coat lightly with oil and let rest for 10 minutes.
- 3In a separate bowl, mix shredded paneer, 0.5 tsp salt, cumin seeds, chili flakes, minced ginger, cilantro, and yogurt to form the filling.
- 4Divide the rested dough into 6 equal portions.
- 5Roll each dough portion into a small 3-inch circle, place a spoonful of paneer filling in the center, and seal the edges.
- 6Gently roll the stuffed dough into flat parathas, dusting with dry flour as needed.
- 7Heat a griddle (tawa) over medium heat, place a paratha, and cook until light brown spots appear.
- 8Flip the paratha, drizzle about 0.5 tsp oil around the edges and on top, and cook until golden brown and crispy on both sides.
- 9Repeat for the remaining parathas.
