Ingredients
- 1 pound spinach
- 3 green chilies
- 1 inch ginger
- 1 tbsp oil
- 1/2 tsp cumin seeds
- Pinch asafoetida
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp salt
- 1/2 tsp sugar
- 1 tbsp whole wheat flour
- 2 tbsp water
- 1/4 cup heavy cream
- 1/4 cup paneer
Method
- 1Bring water to a boil.
- 2Blanch spinach leaves in boiling water briefly.
- 3Transfer blanched spinach to an ice bath.
- 4Blend blanched spinach with chopped green chilies and ginger.
- 5Heat oil, add cumin seeds and asafoetida.
- 6Pour spinach paste into the pot and stir.
- 7Add turmeric, coriander, salt, and sugar; mix and cook.
- 8Mix whole wheat flour with water to form a slurry.
- 9Stir the flour slurry into the spinach mixture.
- 10Add heavy cream and cubed paneer; cover and cook for 5 minutes.
- 11Serve hot.
