Ingredients
  • 1 pound spinach
  • 3 green chilies
  • 1 inch ginger
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • Pinch asafoetida
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp whole wheat flour
  • 2 tbsp water
  • 1/4 cup heavy cream
  • 1/4 cup paneer
Method
  1. 1Bring water to a boil.
  2. 2Blanch spinach leaves in boiling water briefly.
  3. 3Transfer blanched spinach to an ice bath.
  4. 4Blend blanched spinach with chopped green chilies and ginger.
  5. 5Heat oil, add cumin seeds and asafoetida.
  6. 6Pour spinach paste into the pot and stir.
  7. 7Add turmeric, coriander, salt, and sugar; mix and cook.
  8. 8Mix whole wheat flour with water to form a slurry.
  9. 9Stir the flour slurry into the spinach mixture.
  10. 10Add heavy cream and cubed paneer; cover and cook for 5 minutes.
  11. 11Serve hot.
