Ingredients
  • 130 gm yellow split peas
  • 200 gm fresh spinach
  • 95 gm / 1 small to medium onion
  • 100 gm / 1 medium to large tomato
  • 20 gm / 8 to 9 large garlic cloves
  • 10 gm / 1 & 1/4 th teaspoon finely grated ginger
  • Chopped cilantro (optional)
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon kashmiri red chilli powder
  • 1 heaped teaspoon ground coriander
  • 1 teaspoon sweet paprika
  • 2 teaspoons salt
  • 2 teaspoons ghee
  • 2 tablespoons + 1 tsp oil
  • 2 cups hot water
  • 1 teaspoon cumin seeds
  • 3 dry red chillies
  • 1/2 teaspoon asafoetida (optional)
  • 1 teaspoon fresh lemon/lime juice
Method
  1. 1Rinse yellow split peas thoroughly and add to an Instant Pot with grated ginger, 2 cups hot water, 1 teaspoon turmeric powder, and 1 teaspoon oil.
  2. 2Pressure cook for 12 minutes in Instant Pot (or 10 min in regular pressure cooker; 30+ min in regular pot) and allow natural pressure release.
  3. 3Once cooked, mash the lentils to a smooth consistency using a dal ghotni, wire whisk, or hand blender. Stir in 1 teaspoon salt.
  4. 4In a separate pot, heat 2 heaped teaspoons ghee over medium-high heat. Once melted, reduce heat to medium-low and add 1 teaspoon cumin seeds and 1 dry red chili.
  5. 5Add 1/2 teaspoon asafoetida, then add chopped garlic and onion. Sauté until onions soften, stirring on medium heat.
  6. 6Add 1/2 teaspoon turmeric powder, 1/2 teaspoon Kashmiri chili powder, and 1 heaped teaspoon ground coriander. Stir briefly on low heat.
  7. 7Add chopped tomatoes and cook until softened.
  8. 8Stir in chopped spinach and cook for 2-3 minutes until wilted.
  9. 9Combine the cooked spinach-masala mixture with the mashed lentils, stirring well.
  10. 10For the final tempering (tadka), heat 1-2 tablespoons of oil in a small pan, add 2 deseeded dry red chilies and 1 teaspoon sweet paprika.
  11. 11Pour the hot tempering over the dal. Stir in 1 teaspoon lemon juice and garnish with fresh chopped cilantro before serving.
